In 1937 a pair of Russian immigrants started a small butcher shop outside of the city and sold primarily to the locals who worked in the vineyards and along the growing roadways. By 1944, it had grown enough to secure a government contract selling meat and meat byproducts for rations traveling overseas, supplying the US armed forces with low-cost, high-quality foodstuffs.

In 2015 the first of the two founders' grandsons, Nikolai Chenek, became embroiled in a small scandal in Sacremento, and was forced to sign over the majority of the ownership to the local criminal syndicate. Within two years, the plant was a slipshod affair of brutalized workers, dimmed career prospects, and limited to no adherence to ecological statutes.

In 2019 the owners of the once-proud meat-cutting plant were visited by six figures from Brighton Beach, New York in the middle of the night. By dawn, the property was no longer under the control of the local criminal syndicate and had a substantial improvement in morale, productivity, and legal concerns - .
